That certainly may be part of it, but the primary reason is simpler. Consider a straight line between your eyes and the target, going through the pistol sights. The closer the sights are to your eyes, the bigger the possible "error". Getting the iron sights further away from you is like turning down your mouse sensitivity, if you want to think of it that way.
