It didn't exist because pizza cheese didn't exist in it.
Recipes aren't movies, or books, nobody's was going to go to prison for sharing one, and they have no problem spreading virally. But when core pizza ingredients aren't available, you bake a pirog.
- SoftTalker 2y agoYou can make mozzarella-like cheese at home pretty easily with whole milk and white vinegar. Was fresh whole milk hard to get?
- golergka 2y agoYes. Milk was often not available, condensed milk was used instead, and its not something you can make cheese out from.

And much of it was consumed in the form of kefir or sour cream, or butter, or cottage cheese... Sure, you can turn a bottle of milk and a bag of flour into a pizza, but when the steps for doing so start including 'making your own cheese at home', is it any surprise that people would turn those ingredients into other, simpler-to-prepare/more-culturally-familiar foods?
