I don't use Salesforce personally, why do investors seem to think AI is a threat to their business model? Is it the thinking that a lot of the current uses of their software will be fully automated by AI?

It's a risk. Much of how companies work, or at least the workflows internally might be upended completely. THat doesn't bode well for the incumbent.
