I wonder if the WinPE step could also be used to rewrite the fstab file so that the partition layout isn't hardcoded

  (author here) I did consider it, but you'd also have to modify the copy of the fstab in the initramfs in addition to the one in the root. Admittedly I didn't try very hard to make that happen, I just wanted something working for the bit. :P
