Because I can set it up and share it with my team and quickly onboard new members to our REST API from any environment in less than a few buttons. Any setup needed is already in the pre request script field of the collection. If I wanted to share different versions of the request I can do so via postman’s code tab. I would say this adds tremendous value over a jupyter script.
