Ultra-processed foods are formulations of ingredients, mostly of exclusive industrial use, typically created by series of industrial techniques and processes (hence ‘ultra-processed’).
There's more in the section. There's 4 levels of foods they define.
- Kirby64 3y agoBy these definitions, almost everything is Level 4. Level 1 is basically no preparation (fruits/veg, etc) or some form of minimal processing that involves no addition of any ingredients, including salt! Level 2 is literally only processed byproducts like salt, butter, oil, etc. Level 3 is anything that involves preserving something from level 1, including adding salt, canning, cheeses with salt, etc. Bread, as long as it is freshly prepared falls under this too I guess. Level 4 is... everything else? By this categorization, most things would be considered ultra-processed, including preparations you make at home that are using non-level 4 foods by my reading.
