I think the problem with the article is that the author talks about testing the actual machine learning processes. In that case, you aren't really doing unit tests, yeah. If you're just using a ready-made model in an app, for unit tests mocking the model out is fine. For integration tests, you probably want to use the actual model, of course (maybe with low temperature, to reduce flakiness?).
