UI definitely shouldn't have to be standard, but if it deviates, it should be good! Intuitive, memorable, easy to navigate, etc. There are as many bad user interfaces out there as there is bad graphic design, although I often think that the majority of "egregious" examples of graphic design (signs, etc) are actually quite functional and informative, just arguably visually-offensive -- they do their job well enough, they're just tarted up like toaster pastries. Bad UIs on the other hand are genuinely unusable and can make or break an otherwise-brilliant program or service.
