I use docker (compose) a lot for my daily dev (on linux) to create and maintain web applications. Mostly Go backend, Svelte frontend, Mysql or SQLite db, Traefik or Caddy proxy, ... I avoided a lot of your troubles by coding/running/debuging the main program (app server) outside of a container and letting "only" the infrastructure parts inside (db, mail, ...) Only at release time that I embed the server part in a container.
