America Loves Chinese Restaurants, but Michelin Gave Just One a Star
- jfengel 3y agoI'm conflicted. On the one hand, I want to say "Michelin is pretentious and arbitrary. Nobody should pay any attention to it. And it's even worse about America." On the other hand... fine dining is an art form, an entertainment no worse than painting, movies, or watching sports. I've had meals at Michelin-starred restaurants, and they're amazing. Michelin is, rather arbitrarily, the premier critic of that particular art form, and they really should earn that reputation by at least trying to be even-handed about it. It's no surprise that a French company should prefer French-style fine dining. But a lot of that is about the experience, not just the cuisine, and restaurants like the ones in the article have bent over backwards to give French-style service and amenities. The reviewers don't have to be experts in Chinese cuisine to know that they're getting something special.
