People are going to hate on me for this but I don't do any of that stuff anymore. I've tried it all, fresh roasted beans, roasting them myself, different brewing machines, ideal water temps etc... yes for all that work and time and effort you can get a fantastic cup of coffee. Of course it can be difficult to precisely reproduce that cup of coffee. With practice you can reduce the variations from cup to cup but it will never be the same any two times. None of that work is worth the effort because with a short investment of time you can get your perfect cup of coffee much easier.
This is where people are going to hate on me but the perfect cup of coffee lies in freeze dried instant coffee. Yes it's true instant coffee is amazing when it's done right. There's only two things you need to figure out. The first is easy water temperature reconstitute your coffee at 180° f. The second is a little more difficult because it takes time. You must find a brand that you like because everyone's tastes are a little bit different. For the same reason there's a thousand different varieties and roasts of coffee beans, there's also a massive variety of instant coffee. Buy the smallest package you can and try different instant coffees until you find the one you like. Surprisingly mine was one of the cheapest instant coffees that you can get.
Now your cup of coffee becomes insanely simple with no waste like a Keurig and these other machines. With your microwave you can dial in your water temperature perfectly because you can start with a known water temperature. I get my water filtered and chilled from the refrigerator and I microwave it for 2 minutes and 5 seconds and it's perfect every time to hit the temperature I want. I reconstitute my coffee and I have a perfect cup every time without messing around with all this other nonsense. It just took the small investment of finding the instant coffee that I liked.
For those people who have the instant coffee hate it's very likely you had it reconstituted at the wrong temperature and very likely it simply wasn't a blend that you liked. Instant coffee is coffee made by science it is brewed at the perfect temperature from the beans the beans are roasted and selected perfectly to be the same every time. It is flash Frozen and it is dehydrated to lock in the perfect flavor. No amount of home futzing around will allow you to brew a cup of coffee like they do at the places that make instant coffee. No matter how good you are your coffee will vary from time to time.

- smoldesu 3y agoI've had good instant coffee before, but I don't think it's appropriate to say "perfect cup" and "water soluble" in the same breath. Maybe I just haven't tried your Skunkworks black-project freeze-tried roast yet, though :p Once you factor espresso into the mix, I don't think even the most expensive instant coffee stands a chance. It's closer fight between a Keurig pod or a pour-over coffee, but a cheap espresso machine will get you closer to the "90% mark" than higher-quality insta-joe does, in my experience. I won't hate on you, but I'll definitely remark that your palate is interesting
