Namely, it lowers their costs as they're not running infrastructure to power the AI/ML options available to iPhone users; it distributes the compute of that to the edge, again saving them money and taking advantage of the costs they've already laid out for the manufacturer of the device; and it gives consumers the privacy they want - the data never leaves the phone.
