Noticed something interesting a while ago:
By dry weight, most veggies are:
* Surprisingly high in protein. And
* Apart from those, energy contents mostly from sugars. Less so from complex carbs or fat.
So: mostly water, fibre rich, sugars + protein sources (+ vitamins & some minerals, of course).
Looked at this way, I'd rate potatoes not as vegetables. Compared to most veggies: almost no sugars, much more starch, different carbs/protein ratio, less fibers, few vitamins. Besides being unhealthy to eat if green ;-)
Another point: most veggies (even those that are normally cooked) can be eaten raw if desired. Definitely not recommended with potatoes.
