I use a 2.4Ghz Core 2 Duo 2007 iMac running Snow Leopard as my photo lab workstation. Upgraded to 5GB RAM, 512GB SSD. Runs Aperture 2, scans film, and prints photos like a dream. It can even do some light web browsing with https://github.com/wicknix/InterWebSnow https://github.com/wicknix/InterWebSnow, but it often struggles with the modern web.
This machine can also be upgraded to a Core 2 Extreme, but I haven't found that necessary for my workflow.
