Serious question: How is this any better than using an iPhone, and using a legitimate E2E communication app?

  It depends. Phone carriers can still get metadata about iMessage. What phone numbers you are connecting with, when you send them, etc. Even if the actual content is encrypted, the metadata could be useful.
