Have you tried zucchini "spaghetti" salad? Basically there are these cutters which cut the zucchini (raw) into very long "noodles". I think they are sometimes called "zoodles". With these "noodles" you can do anything you like. But I've only tried it as a salad. i.e. add oil, salt, pepper and whatever you like, mix it, and enjoy.
