There is a Target in my area that I sometimes go to that only has self-checkout machines. I go to the person supervising the machines and ask them to operate it for me and hand them the money. I know it seems dickish but I have never once used a self-checkout that I didn't hate and which didn't have some weird issue (for one, I always have a bag I am wearing or else I shove the things I buy into my pockets and the machines hate that). Absolutely just refuse to use the machine. They will accommodate you. If enough people do it then they will get rid of them.
