I think Tock tried to do dynamic pricing for tables. (Tock was founded by Nick Kokonas a former Chicago mercantile exchange trader and co owner of Chicago-based Alinea). Alinea also has other ways to prevent no shows like selling tickets etc. Tablz from Toronto does dynamic pricing.
