I saw some cases where the company gave stock options for employees and kept everyone hanging due to a promise of an IPO and when the whole thing scrubs, the founders sells to the PE and the first measure is to expire all the options from the employee pool [1]. Honestly I think the whole thing about options with the rise of PE and this brutal aspect to get best financial resources is over for any person joining wanting to have a more outsized exit.
