I fully agree with your point actually -- if something can be known, one should try to find out. To your point, I actually had myself tested for Celiac once I saw how well Paleo worked for me. But I don't have it... While your point stands, I think my point does too - even in spaces where you don't get a crisp diagnosis or a scientifically proven link, the empirical observations are valuable and actionable.
