Jetbrains' model is really the best of both worlds. One reason I never could get into OmniGraffle: I can't just pass a file to a coworker to continue editing on their side, if they doesn't also pay for OmniGraffle. In contrast a plantUml/mermaid diagram will work, and they'll have the choice on how they want to edit it (albeit I don't think there is any good, non text based visual editors...) A commercial player coming up with a very good plantUml/mermaid compatible visual editor would be a godsend (albeit, such a niche market I don't know if it would be profitable)
