Two of the best cooks I have ever known have significant visual impairment, though neither is blind. One is blind in one eye and I've heard the other described by someone knowledgeable as one of "the sighted blind." They both rely heavily on smell to determine doneness, which gets vastly superior results to my reliance on time as an indicator of doneness.
