I know this is more of an information security oriented tool, but Burp Suite by Portswigger is an amazing HTTP proxy. Over the years, as an information security consultant, I have used it quite a bit when writing my own little web apps to diagnose and debug any issues. It isn't a proper software testing tool in the DevOps sense, but if you are manually debugging and poking at a larger API there isn't a better tool out there IMO.
