Is the "nitrate-free" bacon in the UK like the kind in the states that is cured with celery juice instead and ends up forming even more nitrites than the traditional kind?
- not_the_fda 3y agoAll bacon has nitrates in it, its what makes it bacon and not just a slab of pork. Bacon is pork belly cured with nitrates.
- Tagbert 3y agoNo, the traditional seasoning and curing is with smoke, salt, and sometimes sugar. Nitrites were added with industrialization. My understanding is that in the UK/EU companies cannot claim that they added no nitrites while loading the bacon up with nitrite-rich celery extract.
