Commercial dishwashers depend on all the food being scraped off before they get fed. I know because I was the "dishwasher" in my school, and that's how I paid for my lunch. My job was to scrape off all the food and get the dishes visually clean, at which point I would load them into the tray and put the trays into the commercial dishwasher. The point of the commercial dishwasher is really to get the water super hot (steam, actually), and then sanitize the dishes after they've been cleaned.
