Commercial Units don't give a fuck about water and energy. They cost more but will last 20 years plus.

    i believe those are sterlizers, not dishwashers. you need to do a thorough pre-wash before loading dishes into them. a domestic dishwasher is designed to be used by any idiot, and without following any real procedure. they also release steam in quantities that will have negative effects in a kitchen that wasn't built to withstand that. commercial appliances are meant to be used in commercial kitchens with commercial ventilation.

      Commercial dishwasher are meant to be used immediately after your meal. So nothing has time to really dry up and stick on. Domestic dishwashers are designed to deal with plates sitting around for the few days it might take a small household to fill them up before running.

      Many old units required pre-wash, newer units now advertise that you can get rid of pre-wash, saving time and money.
