In both Firefox and Chromium, I can't open a new profile on a new tab. (This may be a difference in terms.)
I create different aliases/ scripts/ desktop icons for each profile, so typing or clicking "Facebook" opens the browser profile for that, while "Reddit" opens a different one, etc.
Firefox has "containers" which allow cookie separation on different tabs, but they use the same add-ons/ extensions, so I use that feature less frequently.

It is a feature to isolate browsing on Firefox into different categories, comparable to profiles (and often suggested as the better alternative). Apart from the isolation feature of using different browsers, it is also important for me to reduce the lock-in effect of being dependent on a single browser. If I use different browsers all the time, it will be easier to switch or dump a browser in the future.
