Should I be concerned if a payments processor or a SaaS business is using Lets Encrypt?

  No. From a security point of view, LE is fine -- even superior to other methods if the service isn't on their game. The valid issues with it aren't security-related in my opinion. Management issues like updating certs are more time-critical, of course, but if they get that wrong, the worst that will happen is the service won't be available for a bit.

    Ok so you discover your SSL management process is broken much sooner with LesEncrypt vs the competitors. That sounds like an added-value.
