I bought a used HP Microserver gen 8 last year. Cost maybe 100 euros. Dual core, 8 gigs of RAM, raid controller, dual Ethernet and ELO (which is better than I expected). It only uses 10 to 25 watts depending on load.
I run arch on it (yes…) because it’s a distro I’ve used since 2006 and I know my way around. I dislike gui tools.
On top of arch I have a qemu vm that serves Postgres and grafana. There’s some python scripts that gather data from my solar array and other personal stuff.
Oh and I have a home assistant docker instance. I’m not sure how I feel about it yet. It’s a little fiddly.
This machine also has a VPN connection to the web that I occasionally use on other machines via ssh.
