I mean, there are obvious differences. Zelda is more geared toward kids. But they're all the spectrum of action/adventure/rpg with focuses on exploration and combat, big interesting bosses, cryptic/nefarious NPC's, puzzles and traps, etc. It's also fun to see the back-and-forth of these games influencing each other. There may be some speculation, but I definitely see a path from Old Zelda->Dark Souls->Breath of the Wild->Elden Ring.
