IMHO, I agree with you, most businesses would probably be happy with SQLite;
SQLite in WAL mode is really fast, the file size limit is basically in Terabytes and if you reach a bottleneck you probably reach a point where you can invest in more.
SQLite is quite powerful and as you said, really simple. Also, the documentation is easy to follow.
