Carpentry, cabinet making, building a house, are not very precise. And they can be quite varied in terms of exactly what sinks and stoves and other fittings are wanted where. It wouldn't be feasible to get exact measurements, send them to the factory, and then get back a precisely fitting top. At least not in remodels and one-off custom builds.
