I've been uaing Gnucash for about 7 years now. My process is periodically import csv from my bank into Gnucash and categorise. I find having a bit of UI is better than some of the plain text systems (ledger, et al). I think one of the biggest challenges is creating a chart of accounts as that is the structure for how things are recorded. I'm an accountant, and I still feel that it is hard to understand what it means when looking at ones finances. But having it recorded at least allows you to make a start.
