Several years ago, inspired by Laudato Si', I decided to switch over to using cloth dish towels in the kitchen, as well as dinner napkins. And then I could just toss them in the laundry and rotate stock.
This was working pretty well. But I still found that I wanted paper towels. So I do keep a few rolls in stock, but they go very, very slowly now. The only times I use paper towels are if I have some grody mess that'll ruin the towels and/or needs to be immediately thrown into the garbage, and so paper towels are a logical substrate for that.
I think it's been at least 5 months since I opened a new roll.
