Soldered in memory is a key part of why apple hardware is lower power, smaller, and higher memory bandwidth than the x86-64 counterparts. Sure 2 dimms on a mac mini, or mba wouldn't hugely change the form factor. However 4 dimms, 8 dimms, or 16 dimms would. Unlike the AMD and Intel product lines apple does actually provide 2x, 4x, and 8x the memory bandwidth with basically no compromise on power usage, physical size, or noise.
Sure AMD Epyc, Intel Xeon, Threadripper Pro and similar to improve memory bandwidth, but at a substantial penalty in size and power.
