What would you recommend as the canonical work to read for the first thing you mention - fuzzy set theory & fuzzy measure theory? I've run into fuzzy set theory before, but not the more sophisticated elements you mention.

But, it's probably a bit out of date by now. Also, if you'd like to learn more about Type-2 Fuzzy Systems, look up anything by Hani Hagras (disclaimer: colleague of mine from the same university, but highly regarded in this field)
