Git was not designed for this. It comes out of the Linux kernel, where you need a secure hash of a segment to prevent compromise. For big projects you have submodules, you can only get a level higher later. In a company, you trust the sources. With Perforce you check out files and work with the part you want. It is a design decision and they could have known before.
