You are missing something: the day schedule society agreed upon derives from the average run of the sun. School doesn't start at 8 because that is some special number, but because without DST it is the value which works best. You want it to start early in the morning, but late enough that everyone is awake (at least kind of). If society switched to permanent "summer time", sooner or later school starts would shift to 9am, as in the winter 8am would be just too early.
