You can block many websites cookie banners by using ublock origin and enable some of the Annoyances filter lists in the settings. I use the "AdGuard annoyances" and "easylist cookie" lists and that blocks many cookie banners. Also, "I don't care about cookies" was recently bought by a company, which could mean bad things for the extension in the future.
