We cannot directly evaluate this assumption because the cookbooks we examined rarely discussed the history of individual dishes. However, the assumption seems reasonable because any recipe that has been around for more than five generations (approximately 100 years) would pre-date electrical refrigeration. Most of the recipes we examined probably were at least that old.
I'm sure this works, it's just funny to see it in a science publication.
