IANAL, but the question on my mind is this: can you just record the stream, especially if the app (like Zoom) has a clear indicator visible to all participants that it is being recorded? And double especially if you're in a one-party consent state? Any lawyers willing to chime in? Another option comes to mind, namely a preemptive "I record all my videos for reference." I can imagine some businesses having a problem with that for secrecy reasons, though.
