The USDA has ruined our food system. That is no exaggeration. I am a small farmer, and I hate them with a passion. Their regulations have made it virtually impossible for me to sell my meat to a restaurant, because we are now down to around a dozen USDA processors in the entire state of Oregon. Those processors within two hours of me are already booked out until 2024, so my only choice is to sell whole/half animal shares processed through non-USDA facilities. Such meat cannot be sold in restaurants or stores. This status quo is directly due to regulations pushed by big meat, designed to be anti-competitive and help put small producers out of business. This was not an accident. The USDA architected this disaster hand-in-hand with big ag.
