Why only 1 Gbps ethernet?

  That's the speed of the NIC built into the CM4. If you want 2.5 or 5 Gbps, you'd have to add a PCIe switch, adding a lot more cost and complexity—and that would also remove the ability to boot off NVMe drives :( Hopefully the next generation Pi has more PCIe lanes or at least a faster lane.
