Sounds like you should join an early stage startup - like 5-15 people in the whole company. There will be lots of rapid development of new features, lots of outages, and minimal process. There will still be some refactoring/rearchitecting, but with a lot less code and a lot less users you can do it a lot faster. You could also consider agency work. There will be more process, a lot more checking in with stakeholders, but you’ll build a wide variety of greenfield projects, and sounds like that’s important to you.
