Is anyone advocating for electric stoves over induction stoves? The only two real benefits to gas over induction are being able to see the flame size and being able to control the heat by lifting the pan up and adding distance between the flame and pan. The other theoretical benefit is being able to retrofit your gas stove with a wokmon, something I’ve been forbidden from doing anyways. Induction heats pans much faster than gas.
