I have process hacker installed and configured to start automatically as administrator on every login (via task manager) simply so I can set msmpeng.exe CPU and IO priorities to below normal. You can probably automate this with PowerShell as well if you don't want a third party application. Personally, I run too much software downloaded off the internet to disable it entirely, and don't trust myself to remember to turn it back on.
