Yes this would work. There are a lot of alternative SBCs to the Raspberry that are easier to find these days. If you plan to use the SDCard make sure you do not write logs to it or that you change it regularly. I recommend that you mount a harddrive/ssd or usb stick for the logs if you really want them.
