Any reason for going with a header instead of media types? I found media types convenient in that they can be explicitly specified in an OpenAPI specification.

Honestly, we found that media types within the GitHub API had just got pretty confusing as we use them for so many things - "feature previews", response formats, versions (https://docs.github.com/en/rest/overview/media-types?apiVersion=2022-11-28 https://docs.github.com/en/rest/overview/media-types?apiVers...). We didn't want to overload them anymore.
