The bit about storage not being possible was something I wish I knew a year ago. We went to a fine dinning restaurant and bought a good-sized whole white winter truffle for the table that was shaved on to various dishes over the evening. At the end of the night we still had most of it left, so I put it in the fridge, thinking I could use it again in a couple of weeks. Expensive mistake. It was total garbage.
