This thought experiment is a wonderful demonstration of the limitations of thought experiments in philosophy.
The premise of a thought experiment used in this way is that the truth of the matter is ultimately to be found in your intuition. One just needs to properly ingest the experimental setup, and the right conclusion will lay itself bare.
This experiment is as absurd as the Chinese room experiment. You will be told that you have only properly understood the experiment's setup if you accept that Mary can somehow have learned all physical facts about a chosen color without experiencing seeing the color. It begs the question, because it explicitly claims that knowledge obtainable only through experience is "not physical" (Mary somehow "knows" all physical information about the color before experiencing it). "But wait, if experiencing red added new information, then experiencing red must not be physical, because... we assumed experiencing red is not physical."
